Beef Stir-Fry

    As a quick and easy recipe, this meal is perfect for a weeknight dinner or a well-balanced lunch. The dish brings together a world of flavours with its lovely mix of beef strips, veggies, beans and pasta. BBQ sauce works magic with the spaghetti and gives the meal a wonderful aroma that is sure to tempt the whole family. Feel free to replace the beef with chicken or pork – the results are great either way. Serves: 4

  • Ingredients:

    30 ml Sunflower oil
    500 g Beef strips
    1 Onion, sliced
    1 Garlic clove, crushed
    2 Carrots cut into strips

    2 Mixed peppers, seeded and sliced
    Half of a small cabbage, sliced
    Salt and freshly ground black pepper to taste

    1 can (410 g) KOO Barbeque Tomato Baked Beans
    250 g Spaghetti, cooked
    Salt and pepper to taste

  • Method:

    1. Heat the oil in a heavy-based frying pan or a wok. Add the beef strips and fry until golden brown in colour. Add the onion and garlic and sauté until onion is translucent.
    2. Add all the remaining vegetables except for beans. Stir-fry for 5 – 7 minutes or until meat is cooked.
    3. Add the KOO Baked Beans in BBQ sauce with sauce to the stir-fry and toss to combine. Cook for another 3 – 4 minutes or until heated through.
    4. Cook spaghetti as per cooking instructions.
    5. Serve hot on cooked spaghetti.
      Variations, hints and tips
      • Replace beef strips with chicken or pork strips.
      • Add chopped spinach or broccoli in place of the cabbage.
