KOO Beans, Spinach and
Mushroom Salad

    A fantastic healthy side or well-balanced meal on its own, this dish proves that not all meals are made equal. Butter and garlic-infused spinach and mushrooms create a scrumptious base in this salad recipe, which is made all the better with some classic baked beans. A handful of halved cherry tomatoes add a beautiful dash of colour and extra freshness to this dish. Serves: 4 - 6

  • Ingredients:

    250 g white button mushrooms, sliced
    30 g butter or margarine
    3 spring onions, finely chopped
    1 clove garlic, finely chopped

    500 g spinach, washed
    60 g cherry tomatoes, halved
    1 can (410 g) KOO Baked Beans in Tomato Sauce

    Pinch of salt
    Freshly ground black pepper, to taste

  • Method:

    1. Heat 5 g butter in a large, heavy-based frying pan. Add in mushrooms and cook until soft.
    2. Add in the garlic and spring onions.
    3. Add in the spinach and allow to soften.
    4. Add the KOO Baked Beans in Tomato Sauce and warm through.
    5. Place the salad into a serving bowl, add the cherry tomatoes and season.
