KOO Lentil and Celery Salad
with a Lemon Juice Dressing

  • Ingredients:

    Salad
    2 cans (410 g each) KOO Lentils
    50 g cherry tomatoes, halved
    1 celery stalk, finely sliced
    1 spring onion, finely sliced
    75 ml sunflower oil
    Zest and juice of 1 lemon
    Pinch of salt for seasoning
    Freshly ground black pepper to taste

    Lemon Juice Dressing
    2 lemons, zest and juice
    100 ml sunflower oil
    30 ml fresh parsley, roughly chopped
     

     


    10 ml castor sugar
    60 ml boiling water
    Pinch of salt for seasoning

     

  • Method:

    Celery Salad

    1. Halve the cherry tomatoes, slice the celery and the spring onions and mix together.
    2. old through the lentils.
    3. Mix the oil, lemon juice and zest.
    4. Season with salt and pepper to taste.


    Dressing

    1. In a small mixing bowl, whisk together the lemon juice, zest, oil and parsley.
    2. Dissolve the castor sugar in the boiling water and mix into the oil and lemon mixture.
    3. Season with salt and pepper to taste.


    Variations, hints and tips
    • For a more substantial summer dinner, add tinned tuna (drained) or shredded chicken to the lentil salad.
