Beans Crustless Quiche

    Whether you’re planning a function, making dinner or simply want a tasty teatime treat, this easy quiche recipe will be a sure fire winner. Although this is a crustless quiche, it calls for a light breadcrumb and Parmesan lining that gives the dish a slightly crispy edge. The moreish savoury filling uses two well-known companions – samp and beans – making it a truly local delight. Serve it with some salad for a well-rounded meal. Serves: 4 - 6

  • Ingredients:

    10 g Butter or margarine, melted for brushing
    10 g Parmesan cheese, grated
    25 g Fresh breadcrumbs, for dusting
    150 ml Milk

    4 Eggs, beaten
    5 ml Butter or margarine
    1 Onion, sliced
    150 ml Cream

    10 g Fresh flat leaf parsley, chopped
    1 can (410 g) KOO Samp & Beans Original, drained and washed

  • Method:

    1. Preheat oven to 160°C. Brush a 23 cm round baking dish with butter.
    2. Combine the breadcrumbs and Parmesan cheese, and evenly coat the inside of the buttered dish with the breadcrumb and Parmesan mixture. Set aside.
    3. In a large measuring jug, whisk together the milk, cream, eggs and seasoning. Set aside.
    4. Melt 5 ml butter in a medium-sized, heavy-based frying pan. Add onions and fry until tender and golden. Stir in the parsley. Set aside.
    5. Spread out the KOO Samp & Beans evenly in the baking dish, and add in the onions.
    6. Pour over the egg and milk mixture. Place in oven and bake for 30 – 35 minutes, or until set.

      Variations, hints and tips
      •    Serve either warm or cold.
      •    Make the quiche the day before your function and warm through in the oven at 130°C for 20 minutes before serving.
      •    Use KOO Baked Beans in Chakalaka Sauce as an alternative to the samp and beans.
