    You will enjoy all the different tastes and textures in this gourmet-looking dessert. This easy peach and meringue recipe only asks for a few simple ingredients, but delivers so much more. The peach halves make for a soft, fruity base for the elegant meringue top, while the biscuits add a rich, crunchy centre. Said to be an old classic serving idea made famous by our mothers, this is a quick and easy dessert to prepare and - best of all - it uses everyday ingredients. Serves: 4-6

  • Ingredients:

    1 can (410 g) can of Rhodes Peach Halves in syrup
    5 – 7 chocolate biscuits

    45 ml brandy or sherry
    2 egg whites 

    80 ml castor sugar
    5 ml vanilla essence 

  • Method:

    1. Drain the Rhodes Peach Halves and place them onto a small baking sheet with their cavities facing uppermost.
    2. Pop a chocolate biscuit first into the brandy and then into each peach half.
    3. Beat the egg whites until stiff. Gradually add the sugar while beating until the mixture is thick and glossy.
    4. Stir in the vanilla essence.
    5. Spoon or pipe the meringue onto each peach, covering the biscuit completely.
    6. Use a blowtorch or grill in the oven for a few minutes until the meringue is golden, then serve.  
      • You can use rooibos tea as a substitute for the brandy or sherry.
