1 whole chicken
2 tbsp. (30 ml) olive oil, plus extra to drizzle
6–8 thyme sprigs; leaves only
1 lemon
½ tsp. (2.5 ml) paprika
Salt and freshly ground black pepper
4 sage sprigs
4 thyme sprigs
2 oregano sprigs
1 onion; peeled and thickly sliced
2 carrots; peeled and chopped
2 celery stalks; chopped
1 garlic bulb; halved
2 lemons; halved
6 potatoes; washed and cut into thick wedges
4 tsp. (20 ml) flour
½ cup (125 ml) white wine
1 cup (250 ml) chicken stock
