Chicken with Green Salad

  • Ingredients:

    Onion-stuffed Chicken
    One chicken

    15 ml butter

    5 ml olive oil

    2 onions, sliced

    6 sprigs of thyme

    2 garlic cloves, chopped

    4 chicken breasts with skin and bone
    
Salt and freshly ground black pepper

    Green salad
    
Lettuce

    2 spring onions, cut into strips

    Dressing
    
15 ml olive oil

    10 ml lemon juice

    5 ml Dijon mustard

  • Method:

    1. Preheat the oven to 230°C.

    2. Heat the butter and olive oil and gently fry the onions, thyme and garlic until caramelised. Leave to cool.

    3. Stuff the onion under the chicken skin, sprinkle salt and pepper on the chicken and roast for 15 minutes.

    4. Reduce the temperature to 180°C and roast for another 30 minutes or until done.

    5. Mix the salad ingredients.

    6. Mix the dressing ingredients and pour over the salad.

    7. Serve the chicken with the salad.
