    If you always reach for the cocktail menu when you’re at a restaurant, you will be very happy to have your hands on this cooling peach daiquiri cocktail recipe. Perfect for summer drinks, you can make this for sundowners when you’re having friends over or serve it as a festive, icy surprise to wind down from the week with your better half. Serves: 4

  • Ingredients:

    1 can (825 g) of Rhodes Peach Halves in syrup, drained
    65 ml lime juice

    80 ml rum
    500 ml peach juice

    500 ml ice cubes
    8 mint leaves

  • Method:

    1. Place the peach halves, lime juice, rum, peach juice, half of the ice cubes and 4 of the mint leaves in a processor and process until the ice is crushed.
    2. Add the rest of the ice and process until the mixture is slushy. 
    3. Pour into attractive glasses and serve garnished with the remaining mint leaves.
