    An easy alternative to jar pickles, this pickled cucumber recipe produces a deli-quality side dish that can be used as a classic sandwich filler, enjoyed with mustard-based dishes, German delicacies or on its own with salt crackers and biscuits. There is no cooking required, so you can enjoy some well-deserved time out while the dish prepares itself. Serves: 2 Preparation time: 3 hours

  • Ingredients:

    1 cucumber, very thinly sliced
    10 ml sea salt flakes

    15 ml rice vinegar
    20 ml castor sugar

    15 ml chopped fresh dill

  • Method:

    1. Put the cucumber slices in a colander and sprinkle with salt.
    2. Place a small plate on top of the cucumber slices and weigh it down to squeeze out the liquid.
    3. Let it stand for about 3 hours.
    4. Transfer the cucumber to a bowl and add the remaining ingredients. Cover until needed.
